Our arms filled with Bagliani’s Market bags, Kevin and I struggled through the front door, randomly threw the food into the fridge and headed back out to the car and onwards to my in-laws for Father’s Day dinner.
Arriving at their house, we are greeted with the savory smell of simmering tomato sauce. My mother-in-law Dale is an excellent cook. She’s the kind of cook who is at her best with NJ flounder and corn on the cob. She’s the kind of cook who always makes a little extra in case one of her kids happens to stop by. Unfortunately, she is also the kind of cook who is reluctant to share her recipes with me. But, this time I was in luck. She was willing to part with what she calls her ‘chicken cattitore-ish recipe.’
-chicken breasts
-can of whole tomatoes (chopped)
-handful fresh parsley
-handful fresh basil
-3-4 cloves of chopped garlic
-salt & pepper to taste
-approx 2 tbs of parmesan cheese
-3-4 oz italian sausage to taste
-mix all ingredients (except the chicken) and cook gently for approx 1 hour
-brown the chicken with the salt and pepper
-add the chicken to the other ingredients and simmer for another hour
-serve over pasta (Dale uses rigatoni)
Dinner was delicious and my father-in-law loved the scarf I knitted for him.
